Cardamom Orange Olive Oil Cake

Moist citrus cake with warm spice, made tender with fruity olive oil instead of butter.

1 1/2 cups
all-purpose flour
1 1/2 tsp
baking powder
1/2 tsp
salt
1 tsp
ground cardamom

large eggs
1 cup
granulated sugar
3/4 cup
extra-virgin olive oil
1/2 cup
whole milk
2 tbsp
orange zest
1/4 cup
fresh orange juice
1 tsp
vanilla extract

Tikanga

  1. Preheat oven to 350°F and grease a 9-inch round cake pan, then line the bottom with parchment.
  2. Whisk together flour, baking powder, salt, and cardamom in a medium bowl.
  3. Beat eggs and sugar in a large bowl with an electric mixer until thick and pale, about 3 minutes.
  4. With mixer on low, drizzle in olive oil slowly until incorporated.
  5. Mix in milk, orange zest, orange juice, and vanilla.
  6. Fold in dry ingredients just until no streaks remain.
  7. Pour batter into prepared pan and bake for 40-45 minutes until a toothpick comes out clean.
  8. Cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
