Classic Tomato Sauce
Classic Tomato Sauce for pasta and other tomato based dishes.

2.5 kg
Tomatos
(Roma works best)

Brown Onion
4 clove
Garlic
4
Bay Leaves
1 tsp
Fish Sauce
1 tbsp
Rosemary
1 1/2 tsp
sugar
Salt and pepper to taste
Method
Quarter the Tomato's, finely chop Onion and Garlic
In a large pot heat some oil and fry the Onion and Garlic until Onion is clear
Add the quartered tomato in batches, and use a potato masher to squish, after every batch let the mix come to a boil
Add bay leaves, rosemary and fish sauce
Let simmer for 4hours stir regularly
Once cooked and mixture is looking broken down and saucy, using a fine sieve and silicon spatula push mixture through into another pot
Add sugar, and stir well, boil down to desired consistency.
