Cinnamon Sugar Pretzels

Ingredients
Serves 8
Dough
375 gplain flour
2 tsp~instant yeast
1 tbspcaster sugar
1 tsp~salt
240 mlwarm water
2 tbspmelted butter
Boiling
2 litreswater
2 tbsp~bicarbonate of soda
Topping
60 gmelted butter
100 gcaster sugar
2 tsp~ground cinnamon
Method
- Mix flour, yeast, sugar, and salt in a large bowl.
- Add warm water and melted butter, stirring until a dough forms.
- Knead on a floured surface for 5 minutes until smooth.
- Place in an oiled bowl, cover, and let rise for 1 hour until doubled.
- Heat oven to 220°C and line two baking sheets with parchment.
- Bring 2 litres of water to a boil in a large pot, then add bicarbonate of soda.
- Divide dough into 8 pieces and roll each into a 50cm rope.
- Shape each rope into a pretzel: form a U, cross the ends over twice, then press ends onto the bottom of the U.
- Boil pretzels in batches for 30 seconds, flipping halfway.
- Remove with a slotted spoon and place on prepared trays.
- Bake for 12-15 minutes until deep golden brown.
- Mix sugar and cinnamon in a shallow bowl.
- Brush hot pretzels with melted butter, then toss in cinnamon sugar.
- Serve warm.
